If a person with a gluten allergy has a reaction to the host, what caused the reaction if no bread remains? This is obviously a transubstantiation question.
How can the "appearance" of bread cause a *real* reaction? Or is the person allergic to the body of Christ?
And the Catholic Church stipulates that communion bread must be made of wheat flour and water, with no other ingredients of substitutions.

"They shall take up serpents; and if they drink any deadly thing, it shall not hurt them; they shall lay hands on the sick, and they shall recover."

Good question. More people should be asking this.
Seriously, that's an excellent point. On a related note, if the doctrine of transubstantiation were literally true, then vegetarians would not be able to receive communion.
Personally, I'd go with the Protestant interpretations of the ceremony as either a memorial to Jesus or as symbolic of the unity of all people gathering around a common table to share in a sacred meal.
Better yet, let's take that sacred meal and make it more like Thanksgiving dinner than wafers and wine. ;-)
