What can I give to my 7yr old to relieve the pain of his ears "popping" while plane is taking off & landing? Some people say chew gum, move jaw open n close like he is eating, some say Dimetapp. Parents what are your best suggestions you believe in that have helped your kid(s) during travel?
My son does have allergy & sinus problems which I believe contributes to his pain.

Gum or chewy candy where he has to swallow a lot.

Since your son has allergy and sinus problems, his doctor must have given him something to help with that. Most likely whatever he was given will also help him with popping his ears.
I have had many ruptured eardrums in my childhood and adulthood, so I really understand the pain of not being able to pop your ears. I have tried everything and been to many specialist. I've been told I need to have tubes put in my ears. That being said, chewing gum would be a good place to start. Check out the link below, they have good advice under "prevention". The valsalve maneuver works very well. Gum does not work for me, but what works unbelievable well is beef jerky. Not the soft beef jerky, the harder stuff that you really have to chew on. I buy the brand - Oh Boy! Oberto, it's in a red package. It sounds funny, it's like a drug for me, I have to have it when I fly. I only wish my parents had thought of it when I was a child. Anyways, hope this helps!
