Non-wheat "grains" and/or recipes?So, late this spring, I found out that I have a wheat allergy (possibly celiacs- not sure yet). I know I can eat rice, corn, oats, and some spelt. Does anyone else know of any type of "grain" that I could cook/eat? Or anyone have good and SIMPLE recipes that doesn't involve wheat??? Thanks in advance for your help and have a blessed day.

If can eat rice in the morning instead of oatmeal, try this:
Rice according to the directions on the bag. Replace 1/2 of the water with coconut milk/water and sweeten with sugar to taste, also through in some raisins and a cinnamon stick, and a little vanilla during the cooking. If you use white rice, use the parboiled kind (like Uncle Ben's) - its better for you - it doesn't make your Glycemic level spike as much. add a little sprinkle of cinnamon/sugar, a splash of milk and a small pat of butter to finish and serve.
Here's one for lunch (a light lunch):
Start to cook the rice according to the package directions, about 5 minutes before the rice is done add in chopped up fresh cauliflower or broccoli and chunks of cheese, such as cheddar, or velveeta, and a little milk, salt, pepper, and a healthy squirt of regular yellow mustard. Mix all together, cover. The cheese will melt and the veggies will be perfectly steamed.
Here's one for dinner (a complete 1 pot meal with variations):
Get some Goya products: sofrito (in the freezer section) and Sazon in the spice isle and pink beans, plain or in sauce, and tomato sauce.
Put a little oil in a deep pot with a lid (you should invest in a caldero if you are going to be cooking rice, etc. often, forget the rice cookers because you can do it in a pot and use that pot for many other things)
Heat the oil, then break off a chunk of the sofrito with a fork and put it into the oil, let it melt and begin to saute slightly (smelling good and slightly putanesca)...thenadd the rice according to the rice bag, and liquid too, do not add any more oil or margarine. Replace 1/2 cup of the water with a small can of the tomato sauce, you could also replace a cup of the water with chicken stock or beef stock or vegetable broth. Put in 1 or 2 packets of Sazon, use to for 6-8 servings of rice. Add in garlic, pepper. Give a good stir, cover, wait. About 10 minutes before the cooking is done, add in a can of the pink beans (liquid too), cover and let finish cooking, stirring more frequently now. You don't want it to stick. You can also add in leftover chicken, or beef, cut up a cooked smoked sausage or kielbasa, or even bacalao (dried salted fish that you have soaked in water and checked for bones) or tuna.

I have successfully cooked for numerous celiacs. Celiacs are allergic to gluten in wheat. You are fortunate that today there are many gluten free products, including flour. Check with your physician, but you should be able to enjoy most recipes by substituting these products. They are available in your larger grocery stores.
