Why are vegans so picky about products that may have "traces" of animal products?

Hi,I did the following:

Why are vegans so picky about products that may have "traces" of animal products?I was just wondering, I know a vegan who won't eat anything that COULD have animal products, as it was manufactured in a facility that also processes dairy, eggs, etc.. Even a product that is essentially vegan, and probably is all vegan. I mean what's the big deal about 1/100 of a milligram of milk in a snack you're eating, that just happened to be on the machine? Of course I understand if you have allergies to it, but in this case he does not.

Yeah I don't get it either, In an average life time people eat about 7 spiders in their life while sleeping.

if your food came at a restaurant and it came with 'TRACES' of fecal mater in it would you eat it? if you would you are nasty.

it only takes TRACES to get e.coli

That's just one person. Most vegans do eat products that have those statements on them, since like you said it's just for people with severe allergies. Sometimes they make the personal choice not to, like the person you know, but many don't mind.
